Easy Grilled Kielbasa & Pepper Salad
Is it just me, or are a lot of other people in a hurry when it comes to dinner time? Over this last year of I’ve realized that making something quick doesn’t mean that it has to be unhealthy. In fact, sometimes the healthiest things are made with the least ingredients…yay!
Grilling is always a go to when I’m in a rush because there’s nearly no clean up. My husband’s Polish so we always have some Polish sausage or kielbasa (okay – maybe not the healthiest option of all he-he!) in our fridge and I also keep sweet peppers on hand to snack on. Today, I’ll show you how I used these items to make a simple, healthy and yummy dinner. The easy mustard vinegarette compliments the sausage so nicely.
You will need:
Polish Kielbasa (I like to buy the nitrate free sausage)
Small Sweet Peppers
Romaine Lettuce
White vinegar
Canola Oil (Olive oil if you prefer)
Mustard
Salt
Pepper
Sugar
Directions:
Step 1:
In a small bowl mix:
3 parts oil to 1 part vinegar
Add a dash of salt
Add a dash of sugar
Add a dash of pepper
Add just under as much mustard as you added vinegar
Mix together with a wisk
Taste your dressing. If it’s too strong, add some oil. If you like it tangier, add more vinegar or mustard.
Set aside to mix with romaine lettuce just before serving.
Step 2:
Grilling sausage and peppers
Heat grill to medium-high
Cut kielbasa into desired lengths (mine are about 2″)
Rinse peppers and sprinkle with salt
Place peppers and kielbasa on grill and cook until nice grill marks are formed and peppers and sausage are cooked through ( I buy pre-cooked kielbasa so it’s especially easy)
Once cooked, remove sausage and peppers from the grill
Step 3
Add your dressing to your romaine lettuce and toss
Place grilled kielbasa and peppers on top of bed of lettuce
Serve with french fries, bread or even rice as a side!
This is really easy and can be modified in so many ways. It would be really yummy to add some tomatoes or even red onions to the salad. Make it your own and enjoy!
